Chickpea and Chorizo Soup

On my walk home from work today I was craving chorizo. Given that it was so windy and cold outside I decided to make a soup! This is one of my favourite soups, it’s really filling and tasty. I’ve put the recipe below!

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, crushed
  • 200g chorizo, diced
  • 1 tin chopped tomatoes
  • 1 tin chickpeas, rinsed
  • 600ml vegetable stock
  • Handful of spinach leaves
  • Salt and pepper to taste

Method

  1. Sweat the onions, garlic and chorizo in a pan with olive oil for 5 minutes.
  2. Add the chopped tomatoes, chickpeas and vegetable stock, bring to the boil and then reduce to a simmer for 20 minutes.
  3. Before serving add the spinach, then season with salt and pepper to taste.
