The Avoca Cafe Cookbook is one of the most used and battered book in my parents house… As is evidenced by this photo, check out the doodling on the title that one of us obviously engaged in as kids!
Last weekend when I was home I made the Bacon, Leek and Asparagus Quiche from the book. The recipe makes a really nice satisfying quiche (the 900ml of double cream definitely helps…), but the filling isn’t too stodgy or heavy.
I started off really well, taking photos as I went along, but then I got too into it and forgot to take snaps after the bake blind stage… Oops.
The only modifications I’d make to the books recipe is that the filling is quite liquid, the time on the recipe says bake the quiche for 40 minutes, but I’ve found it takes the quiche about an hour to cook through!
