Sticky Toffee Cupcakes

I really need to stop buying cook books, it’s getting to be a problem. I think I possibly spend 10% of my wages on cookbooks and baking paraphernalia every month… I got the Hummingbird Bakery Cake Days book a while ago. To be fair, I wasn’t sure where to start when I decided to bake something from it. There’s a lot of potential!

I had a craving for sticky toffee pudding so I thought the Sticky Toffee Cupcakes would be a good substitution. The recipe made 16 decently sized cupcakes. They were delicious, and went down a storm in work!

Homemade Christmas Mincemeat

Mince Pies are a pivotal part of Christmas in my family. I’d say over December I make 24 every two days or so for either home or work. The smell of mince pies cooking in the oven in the evenings really evokes a strong sense of Christmas for me. Christmas just wouldn’t be right without them!

Homemade Mixed Peel

In my quest to be organised for Christmas I made homemade mixed peel. I’ll be using this mixed peel in my Mincemeat, Christmas Pudding and Christmas Cake so it was important that I got it done early on! I use a Ballymaloe recipe from the Ballymaloe Cookery Course book.

Christmas Prep!

I’ve three exams to do before I can start getting into Christmas mode, I’ll have to be extra organised to get everything done on time! On the to do list is:

  1. Homemade Mixed Peel – a Ballymaloe recipe*
  2. Ballymaloe Homemade Christmas Mincemeat*
  3. My Nana’s Christmas pudding – according to my father it’s the best pudding recipe in the world 😛
  4. Christmas cake – make a fruit cake and decorate it!
  5. Gingerbread house
  6. Enough mince pies to feed a small army

*Ballymaloe recipes are all from the Ballymaloe Cookery Course book.

First thing I have to do though is buy a load of jam jars! I’ll need to store the mixed peel and mincemeat. Plus the mincemeat has to mature for two weeks to be at it’s best. Any jars I have left by Christmas I’ll give away as gifts!

Toffee Apple and Pecan Pudding

I had a go at making Mary Berry’s Toffee Apple and Pecan Pudding from the Great British Bake Off Masterclass episode. I was having friends over for dinner and was trying to have as much as possible prepared in advance, so a steamed pudding fit into the plan perfectly! I made it the night before and then just reheated it before serving it for dessert!
