I’ve mentioned previously that I have been watching Rachel Allen’s Cake Diaries on RTÉ and that I’d also bought her book Cake. I’ve made the Maple Pecan Cake several times now from the book and it’s been consistently delicious!
The recipe is really simple to follow and the only difficult part is making the pecan praline to decorate – and that isn’t even that hard! Once you’ve the patience to wait for the sugar to melt!
The finished cake is really tasty and mildly addictive (it’s the kind of cake you’ll keep coming back to, it even seems a bit healthy because of the nuts, so you end up justifying eating loads of it…) It keeps well in the fridge, though it’s never lasted in there longer than a day or two!
