I had a small mountain of mashed potatoes left over after a dinner party this week. I decided to make potato cakes to use up the leftovers!
We used to get potato cakes the odd Sunday evening at home when we were little. They’re still a big comfort food to me, even now!
The recipe I use is an Odlums one, if I don’t have the scallions I generally fry up some onions instead.
Totally acceptable to have potato cakes as breakfast, lunch or dinner…
