Christmas Cake – Marzipan

I made marzipan and covered my Christmas Cake today. As my cake is only a 6 inch round I only needed a small amount of marzipan. My Mary Berry book recommended 12 ounces of marzipan for a 6 inch cake.

The 12 ounces refers to the amount of dry ingredients – 4 ounces ground almonds, 4 ounces icing sugar and 4 ounces caster sugar (and an egg and three drops of almond essence but that ruins the rhythm of it!).

Marzipan is really easy to make – you just mix the dry ingredients with the wet. Try not to over work the mixture as it will get too oily. Once mixed you can store your marzipan in clingfilm in the fridge until you’re ready to use it.

The marzipan will take about a week to dry out before I can ice the cake. Then I can decorate it with the Santa and the reindeer I made earlier in the week!
