The Hummingbird Bakery’s Cake Days cookbook is becoming a firm favourite on the oul’ cookbook shelf! I’ve tried a good few things from it so far – Sticky Toffee Cupcakes, Chocolate Guinness Cake, Red Velvet Cupcakes and Marbled Cupcakes. On the back of my previous successes I decided to give their Caramel Cupcakes a try… Here’s how I got on!

I made marzipan and covered my Christmas Cake today. As my cake is only a 6 inch round I only needed a small amount of marzipan. My Mary Berry book recommended 12 ounces of marzipan for a 6 inch cake.

I had a load of lemons and oranges left after I made my Homemade Mixed Peel. I decided to make Lemonade to use them all up. (Although not technically lemonade as I’d a few oranges in the mix!)
I made my first batch of mince pies yesterday, the smell in the kitchen really made me feel Christmas-y! I use a Ballymaloe recipe for the pastry, it’s a rich pastry – it uses a lot more butter than normal and an egg to bind.
Remove from the tray, cool on a wire rack and dredge in icing sugar.

After making a reindeer for my Christmas Cake I decided he might be a bit lonely up there on his own. So I made a Sugarpaste Santa as company for him!
